The rage of Christmas 2017 was the Instant Pot! Ashley and I both had Instant Pots on our Christmas lists and were excitedly anticipating all the meals we could make in them. Maybe you have been doing the Instant Pot thing for a while and you’re an expert, but it is my new favorite cooking appliance and I’m still getting the hang of it. I personally don’t love cooking unless it’s with my man and a glass of red wine and some happy music. The day to day monotony of putting meals together is hard for me and I find variety and time to be the biggest obstacles I face when it comes to putting meals on the table. I end up cooking the same things pretty often and rarely getting out of my comfort zone especially if a recipe calls for things a. I’ve never heard of or b. 25 new spices I don’t already have. Needless to say I like to consider myself an adventurous eater when I go out to eat, but at home I stick to the basics and to things I know my man will approve of. I put together a list of my favorite 30 minute meals, because the other thing is time. Time is something I think we can all agree on gets in the way of preparing delicious meals for our family. It’s so much easier to pick something up on the way home, but it’s become something that is just too expensive and we really are trying to be more intentional about saving our eating out exclusively for the weekends. When I get home from training boot camp at 7:30, I need something quick and relatively healthy so here are some of my go to meals, I hope you enjoy!
I included recipes from one of my personal favorite cookbooks Skinny Taste and from my favorite cooking and meal prep app Fit Men Cook. I know we’re mostly women here, however this app has changed the meal prep game for me. His meals are diverse and the app makes grocery shopping and prep super simple, which is exactly what I need, and I hope can be a good resource for you.
