Although it is starting to warm up, the cold weather always has me craving comfort foods. My comfort foods have changed over the years because my diet has had to change. I went gluten free almost nine years ago and have recently had to make the switch to Paleo due to some auto-immune issues. I know that everyone is always trying to find healthy recipes & especially ones that hit the spot on a cold night (or even a mild night)! Here are a few of my favorites (all from Against All Grain because everything she makes it amazing)...
Buffalo Chicken Stuffed Sweet Potatoes with Creamy Dressing
I made these Buffalo Chicken Stuffed Sweet Potatoes with Creamy Dressing for the first time recently in my Instant Pot. She gives instructions to make it the traditional way & for those with a pressure cooker, which is super great! The chicken is reminiscent of chicken wings & the sweet potato balances it out really, really well!
Crockpot Thai Beef Stew
I feel like Danielle from Against All Grain just gets me. Adding sweet potato to anything makes it so much better. I have made these Enchilada Stuffed Sweet Potatoes quite a few times this winter & Trey really loves it. I sometimes tweak it and just make a bowl with sweet potato hash instead of a roasted sweet potato, but either way, it is delicious! The sauce is really, really good & I think is what makes it so good.
Oatmeal Creme Pie
Full disclosure, I have not made these Oatmeal Creme Pies yet, but they are on my list because they look absolutely amazing. My plan is to either make them this weekend or next! I know that they will be delicious because everything Danielle makes is so good, but I will report back on my thoughts.
